Over the weekend I caught Rachel Ray’s cooking show, I’ll be honest, it wasn’t the first time. I’m a fan and have learned a few things and think she does a really good job, because I am all for 30 minute meals.

Anyway, she made the comment that she wanted to bring out the flavor of the scallops and shrimp she was cooking by cooking them in a light vegetable oil. WRONG…..One of the reasons why I do like Rachel Ray is because she is a huge advocate of olive oil, which is one of the best all around oils to cook with. But the other day she got off track, and recommended using vegetable oils.
I don’t know is she knows why she should or shouldn’t use various oils, but if anyone knows her, you might want to pass this information on to her. The most important thing we need to look at when we talk about oils is how much heat they can handle, because as you heat the oil it can become rancid and when oil becomes rancid it contributes to high cholesterol and high blood pressure. In essence, you want to cook with oils that can handle heat real well such as; olive oil, coconut oil, walnut oil, macademia nut oil, rice oil, as well as, butter.
You see each one of those oils named above can handle heat real well and won’t go rancid during the heating process. But when you cook with vegetable oils….since they can’t handle heat real well they become rancid in the cooking process and all those rancid fats become poisonous to your health especially your heart, when you ingest them.

Please don’t be confused with all the mixed messages and mis-information about how cholesterol and It’s association with heart disease. Cholesterol doesn’t cause heart disease…..cholesterol levels, like high blood pressure is simple a signal to use that our heart may be in jeopardy and needs some attention.
Anyway, when you cook chose oils that are cooled pressed, any oil that comes from a nut is usually good at handling heat. Stay away from cooking with canola oil. It’s great to add to a salad, but canola oil doesn’t handle heat real well.
